- Vegetable stock – 4 cups
- Olive oil – 3 teaspoons
- Red or white onion, finely chopped – 1/2 cup
- Garlic, finely chopped – 3-4 cloves
- Cabbage (green or red), finely chopped – 1 cup
- Cauliflower, cut into bite-size pieces – 1 cup
- Broccoli, cut into bite-sized pieces – 1 cup
- Carrots, cut into small pieces – 1 cup
- Winter squash, cut into small pieces – 1 cup
- Tomatoes, cut into small pieces – 1 cup
- Green peas – 1/2 cup
- Sweet corn – 1/2 cup
- Kale, roughly chopped – 1 cup
- Turmeric powder – 1/2 teaspoon
- Salt to taste
- Crushed black pepper for garnishing
Instructions
- In a large pot, heat 3 teaspoons of olive oil.
- Add the onion and garlic and sauté for 2-3 minutes.
- Add all the vegetables, along with the vegetable stock.
- Mix the turmeric and salt.
- Cook on low heat for 20 minutes.
- Switch off the flame and transfer the soup to a serving bowl.
- Garnish with freshly crushed black pepper and enjoy!
